Purslane, also known as verdolagas, is a wonderful weed that turns up in the summertime and blankets the ground with its vigorous growth, protecting the soil from the hot sun. It can also be purposely cultivated as as edible plant and its small succulent lemony-tasting leaves are delicious in salads. We like making a mix of puslane leaves, chopped mint, red onions, and yogurt.

Purslane Tzatziki
Finely chop purslane and mint. Mix into greek yogurt for a quick tzatziki sauce. Other additions: cucumbers, lemon, olive oil, garlic.
